Cheesy Vegan Wholemeal Spelt Biscuit Recipe Using Nutritional Yeast
This quick and easy to make vegan cheese biscuit recipe uses only a few organic, healthy ingredients. Dairy is substituted with B12 fortified Nutritional Yeast and Olive Oil is substituted for butter. Ingredients – Use organic if possible
1 cup of organic Wholemeal Spelt Flour – you can make this recipe gluten-free by substituting the Spelt Flour for one of the organic gluten-free flour blend recipes here.
1/4 cup of Nutritional Yeast Flakes – make sure they are the ones fortified with B12
1/4 cup of organic, cold-pressed Olive Oil
1/4 cup of filtered or cool boiled water
1 tsp of aluminum free Baking Powder
1/4 tsp of organic Himalayan Pink Salt
Method
Preheat a fan forced oven to 155-160.
Line a baking tray with eco-friendly, unbleached baking paper – I use the IF YOU CARE brand.
Combine all the dry ingredients in a glass or stainless steel bowl using a stainless steel hand whisk.
In a separate bowl vigorously stir the olive oil and water together and then pour into the dry ingredients.
Mix with a spoon to combine and form a dough, then start to work the dough with your hands, kneading until it holds together well. It won’t be quite as pliable as white flour and it tends to break apart more easily.
Using a wooden rolling pin, roll out the dough to about a 3mm thickness and cut into whatever shapes you like and then poke holes in each biscuit with a fork.
*Tip – I like to roll the dough out on the baking paper lined oven tray and cut it into the biscuit shapes on the tray itself.
Bake for 15-20 mins to golden brown and firm to touch.
Let cool on a wire rack and then store in an airtight glass or polypropylene Tupperware container.
