FODMAP Friendly Vegan Choc Mint Energy Balls
As a vegan who can’t tolerate FODMAP’s I am constantly in the kitchen creating treats I can actually eat. My new FODMAP Friendly Vegan Choc Mint Energy Balls are delicious and are super high in protein. I love including hemp and chia seeds into my no bake raw treats.
I have made sure the ingredients are green lighted on the Monash University FODMAP Diet App and they are packed full of nutrition, vitamins, good oils and minerals, all necessary for good health and to complete a vegan diet.
These bliss balls are completely fruit and fructose free.
Dry Ingredients – all organic
1 cup of rolled oats
3/4 cup of pecan nuts
1/3 cup of raw cacao powder
1/3 cup of hemp seeds
1/4 cup chia seeds
1/4 cup sesame seeds
1/3 cup sunflower seeds
1/3 cup pepitas/pumpkin seeds
1 tsp of cinnamon powder
1 tsp of green leaf pure stevia powder
A sprinkle of pink salt
Wet Ingredients – all organic
4 tbsp of coconut oil
2 tbsp of hulled tahini
1 tbsp of coconut syrup
1/4 tsp of peppermint flavour – I use Simply Organic’s peppermint.
3 tbsp of rice bran syrup – I use Pure Harvest’s brand, as I know they check the arsenic levels in their rice products.
Method
In a Vitamix, or other similar blender, individually pulse down to a semi-coarse meal consistency, the oats, pecans, pepitas and sunflower seeds.
Next add all the dry ingredients together into a large stainless steel bowl and mix well with a whisk to combine. This is especially important to ensure the stevia powder is well distributed throughout the mixture.
Then place the wet ingredients together into a glass, or stainless steel bowl. Place this bowl on top of another bowl of boiling hot water to melt down all the ingredients . Stir well to combine into a thick paste.
The add the melted ingredients into the dry ingredients and combine, using a spoon first and then your hands to further knead the mixture together.
*If you find the mixture is too wet and not holding together when you roll it into balls, you can blend down another 1/4 cup of rolled oats to bulk it up. This doesn’t alter the taste.
Store your FODMAP Friendly Vegan Choc Mint Energy Balls in a glass or polypropylene air tight container in the fridge for a few days. Alternatively store in freezer for longer.
