Vegan Organic Dark Chocolate Spelt and Quinoa Cookies
These healthy, Vegan Organic Dark Chocolate Spelt and Quinoa Cookies taste so good, that you will be hard-pressed to convince your friends that they are actually healthy!
Richly decadent, yet full of wholesome, healthy and of course organic ingredients, these chocolate cookies are completely free of animal ingredients.
They are also low in fructose, full of protein, antioxidants, minerals and fiber.
Dry Ingredients:
1 and 3/4 cups of organic Wholemeal Spelt Flour
1 cup of organic Quinoa Flakes
1/2 cup of organic Coconut Sugar – I sometime use 1/3rd of a cup, to keep the sugar intake down.
1/2 cup of organic Cacao Powder – my preferred brand is by Power Super Foods
1 tsp of aluminum free Baking Powder
1/2 tsp of Bicarb
a pinch of Himalayan Pink Salt
Wet Ingredients:
2 tsp of organic Coconut Syrup
1/4 cup of organic, cold-pressed, Olive Oil
3/4 cup of filtered water
Method:
Preheat oven to 150-160 fan forced.
Line a baking tray with eco-friendly, unbleached, baking paper, ( I use the IF YOU CARE one).
Combine all the dry ingredients in a stainless steel bowl and using a fork, or hand whisk, mix well.
In a small bowl add the coconut syrup, olive oil and 1/2 cup of water, leaving the other 1/4 of a cup to add into the batter later.
Thoroughly whisk the wet ingredients together and while still beating them to keep the olive oil emulsified, pour into the dry ingredients.
Stir with a wooden spoon to combine and slowly add in a little more of the remaining filtered water, till you get a nice moist cookie batter.
Shape into balls and flatten down with your palm and spread them out evenly over your baking tray.
Bake for 15 mins and let cook on a wire rack.
Keeps for up to 3 days out of the fridge.
