Easy Vegan Chocolate Mud Cake
This super easy to make,vegan, chocolate mud cake recipe, is not only delicious and rich, but uses all organic ingredients and is low in Fructose.
As opposed to traditional mud cake recipes that are heavy in refined sugar, eggs and butter, this vegan mud cake utilizes healthier, wholefood ingredients, such as wholemeal spelt flour, raw cacao, virgin coconut oil, coconut sugar, coconut milk and coconut syrup.
Vegan Mud Cake Ingredients – All Organic
2 cups of Wholemeal Spelt Flour
3/4 cup of Raw Cacao Powder – ( I use the Power Super Foods brand)
3/4 cup of Coconut Sugar
2 tsp of Bicarb
1/2 tsp of Himalayian Pink Salt
1/2 cup of Virgin Coconut Oil
1 cup of Kettle Boiled Hot Water
1/2 cup of Coconut or Almond Milk
1 tbsp of Coconut Syrup
1 tsp of Vanilla Essence
1 tsp of fresh Lemon Juice
Method
Preheat Oven to 165 fan forced.
Line your cake tin with eco-friendly, unbleached baking paper. I prefer to use a small round or square, glass Pyrex dish, or silicone cake bake-ware.
Sift together all the dry ingredients in a stainless steel or glass bowl. In another stainless steel or glass bowl add your coconut oil to all the other wet ingredients and stir well to coconut oil is completely melted and combined with other ingredients. Then using a mix master or hand whisk, fold the wet ingredients into the dry ingredients and mix for 5 mins.
Pour batter into your lined cake tin and bake for 30 mins.
Allow to cool on a wire rack before icing with organic, fair-trade, melted, dark chocolate.
