Gluten-Free, Tofu and Chickpea Vegan Burger Recipe
These vegan and gluten free, tofu burgers are easy to make, high in protein, healthy, organic and most importantly really delicious. Organic tofu is combined with oats, chickpeas, tamari, tomatoe paste and nutritional yeast and the result is a zesty tasting burger with a crunchy outer coating and a tender, slightly moist center. Give this recipe a try, you won’t be disappointed and p.s kids will love them!
Ingredients
1 pack of Organic Firm Tofu 250g
1 cup of Organic Boiled & Pureed Chickpeas ( I use the split baby chickpeas as they are more tender)
2 tbsp of Organic Tomato Paste
2 tbsp of B12 Fortified Nutritional Yeast
2 tbsp of Organic Tamari
2 tbsp of Organic Olive Oil
1/2 tbsp of Himalayan Pink Salt
3/4 -1 cup of Organic Rolled Oats – ground into a coarse flour using a blender, or alternatively you could buy organic quick oats which are already finer in texture.
Method
Preheat Oven to 175 fan forced and line a baking tray with eco-friendly, un-bleached baking paper.
Rinse your tofu and then using your hands crumble it up into a fine texture using your hands.
Next mix in all the rest of the ingredients and combine well. The mixture should not be too dry or too wet. Start by adding only 3/4 a cup of oat flour and you can always add more if mixture is too wet.
Now shape the mixture into small burger size patties using your hands and lay them out on your prepared baking tray.
Sprinkle with a little extra nutritional yeast and coarse oat flour on both sides and bake in the oven for 25 – 30 mins.
