Raw Vegan Chocolate Nut & Coconut Truffles
These raw chocolate, nut and coconut truffles literally melt in your mouth!
They are full of vegan protein, antioxidants and good oils, thanks to a blend of macadamia nut meal, almond meal, coconut oil, coconut flour and cacao powder.
Raw ingredients ensure that these vegan treats maintain all their rich goodness and they are completely free of refined sugar, as well as being gluten free, fructose free and FODMAP friendly.

Ingredients – all organic if possible
3/4 cup of macadamia nut meal – you can buy it ready made, or blend the macadamia nuts in a Vitamix
1/2 cup of almond meal – as above
2 desert spoons of coconut flour
4 desert spoons of coconut oil
2 desert spoons of coconut syrup
1 heaped desert spoon of raw cacao powder – I personally use The Power Super Food Cacao Powder
a pinch of Himalayan Pink Salt
Method
Blend all ingredients till very smooth in your Vitamix or similar blender. Pour mixture into the, eco-friendly If You Care Mini Baking Cup.
Sprinkle some with desiccated coconut and pop a Goji Berry into the middle of each one.
Set in the fridge for at least 3 hours.
Keep in the fridge to avoid them melting and consume within in 3 days.
