Vegan Oat and Quinoa Chocolate Berry Balls
These Vegan Oat and Quinoa Chocolate Berry Balls are just delicious, full of good oils, protein and antioxidants, they are also completely made from organic ingredients. What more could you ask for in a health cookie recipe!! This cookie ball recipe is vegan and lactose free and by taking out the dried fruit and swapping spelt for buckwheat flour, it can easily be made into a fructose free, low FODMAP cookie recipe. They also make a great, healthy, treat for the kids lunches.
These easy bake cookie balls are low in sugar, actually only using a small amount of organic coconut palm sugar or maple syrup to sweeten them and dried organic berries. These healthy vegan treats are packed full of goodness, including the wonderful health properties of raw coconut oil , the protein packed punch of Quinoa Flakes, anti-oxidant properties of Raw Cacao Powder and dried Goji and Bluberries and the energy drive of oats.
Ingredients – All Organic
1 cup of Quinoa Flakes
3 cups of quick oats
1 cup of spelt flour
3 tablespoons of raw cacao powder
1/2 tsp of Ginger Powder
Pinch of Salt
2 Tablespoons of mixed dried Goji & Blueberries
1/3 cup of Coconut Palm Sugar or Maple Syrup ( which will make them less crunchy and more moist)
3/4 a cup of melted Raw Coconut Oil
1/4 a cup of boiling water.
1/2 cup of almond milk
Method
Preheat Oven to 150 degrees
In a stainless steel bowl, mix together all the dry ingredients. In a smaller bowl, mix together all the wet ingredients. Combine the two with a spoon, then knead a little in bowl using your hands. Take a heaped tablespoon of the dough and form into ping pong sized balls with your hands and pop them on a baking tray lined with eco-friendly baking paper. Bake for 20-30 mins and them let them cool on a wire rack and store in an air-tight container.
