This simple, vegan salad with seaweed flakes, is so easy to toss together, with vibrant colour and a deliciously crunchy texture and zingy taste, your family won’t even realize just how healthy it is.
It is absolutely loaded with antioxidants, vitamins and important minerals.
When making salads I try to always use certified organically grown fresh produce, but sometime this is not always possible. In this salad the only conventionally grown ingredient is the pomegranate seeds, however, I did make sure they were sourced from locally grown Australian pomegranates.
Ingredients – choose organic if possible.
2 large or 4 small Lebanese Cucumbers
3 medium Red Capsicums
4 medium ripe Tomatoes
1/2 a cup of fresh Pomegranate Seeds
1/4 cup of roughly chopped raw Almonds
1 tbsp of hulled Sesame Seeds
1 tablespoon of Power Super Foods Dulse Flakes – I will only ever use Power Super Foods Seaweed range as I know they source their seaweed from clean waters that haven’t been affected by the fallout of radiation from Fukushima – see more info on this issue here.
Dressing
1 tbsp of cold-pressed olive oil
1 tsp of coconut syrup
the juice of one small lemon
1/2 tsp of Himalayan Pink Salt
Black Pepper to taste.
Method
Wash well and chop up all the vegetables and combine well with dressing and serve.
