Raw Cacao, Coconut Oil and Chia Seed Coconut Bark Recipe
This easy vegan, Coconut Oil Bark recipe utilizes just 4 ingredient and is a ‘raw recipe’, which means it requires no cooking of any kind, just combining and mixing, so it is nice and easy taking just minutes to make and you are getting the health benefits of food in its raw, unhampered state. It is also Fructose and Lactose Free and therefore suitable for those on a low FODMAP diet.

Coconut Bark does however require refrigeration to keep it’s form, as if coconut oil becomes warm it liquefies and you will be left will a tasty puddle of coconut oil, chia seeds and dark chocolate, which while not so bad, is very messy!
Ingredients
4 tablespoons of melted virgin, cold-pressed, organic, Coconut Oil
3 tablespoons of Chia Seeds
2 tablespoons of raw, organic Cacao Powder – I use Power Super Foods Cacao
1 tablespoon of organic Maple Syrup.
or… and alternative if you do not have raw Cacao is you can use 2 tablespoon of melted, fair-trade, organic, Dark Chocolate.
* Note – if using melted dark chocolate and not Cacao Powder, as it already contains sugar, you will not need the maple syrup, or if the chocolate is bitter you may perhaps need only half a tablespoon of maple syrup.
Method
To melt the coconut oil, simple place your 4 tablespoons in a small glass and sit it inside a bowl , or jug of hot water till it melts. If using dark chocolate, melt a few pieces down using the same method. Next mix all the ingredients together, then pour into a shallow glass Pyrex dish, lined with eco-friendly baking paper and pop in the freezer for around 10 minutes, or until solid. Once solid take it out of the freezer and break up into rough pieces and store in either a glass container in the fridge, or a plastic sealed container, made from #no. 5 plastic polypropylene.
This will last for a week in the fridge, but probably about a day in reality as it is just so yummy.
