Organic, Vegan, Gluten-Free, Chocolate, Choc Chip Spice Cookies
These rich organic, gluten-free, fructose free, FODMAP friendly and vegan, chocolate choc chip cookies combine raw cacao, with cardamon, cinnamon and ginger to create an indulgent chocolatey treat that is low in sugar and actually healthy too!
Ingredients,
1 cup of pecan nuts or macadamia nut, ground till a course flour.
1.5 cups of oat flour ( if gluten intolerant be sure to use certified gluten free oats)
1/2 cup of tapioca flour
1/4 cup of raw cacao powder
1/8 cup of panella or coconut sugar
1 tsp of bicarb
1 tsp of cinnamon
1 tsp of ginger
1/2 tsp of cardamon ( you can use a tsp if you like the flavour of cardamon)
1/2 tsp of Himalayan pink salt
50 grams of broken up dark chocolate – please make sure it is fair-trade and you want to make sure you have broken the pieces up quite smal.
Wet Ingredients,
1 tbsp of psyllium husk in a cup of filtered water ( this is your egg replacer)
5 tbsp of coconut oil melted in 5 tbsp of kettle boiled water
1 tbsp of Pure Harvest Rice Bran Syrup
1 tsp of vanilla
1 tsp of apple cider vinegar
Method
Preheat fan-forced over to 160
Using either a large glass or stainless steel bowl, thoroughly combine all the dry ingredients with a hand whisk.
Then in another glass or stainless steel bowl thoroughly whisk together wet ingredients.
Pour wet ingredients into dry ingredients and stir well to combine with a stainless steel spoon.
Drop tablespoons of the batter onto your baking tray lined with eco-friendly, unbleached baking paper and bake for 15mins at 160.
